This recipe makes one of the best desserts we've ever had. Not only is it delicious,
but it solves a number of culinary challenges. It's:
~ Easy to make
~ Fast to make
~ Requires no baking
~ Diary-free / Casein-free
~ Egg-free
~ Vegan and vegetarian
~ Kosher
~ Contains no refined sugar
~ Can be made with 100% organic ingredients (GMO-free)
INGREDIENTS:
Ready made graham cracker or chocolate pie crust
10 oz vegan semi-sweet chocolate chips
1/2 cup peanut butter
12 oz Mori Nu silken extra firm tofu
5 tbsp of pure maple syrup
3 oz soy milk (more or less)
Optional:
1/2 - 1cup coconut flakes
1 tbsp organic vanilla
pecan pieces
Melt the chocolate in the microwave. use a blender to mix all ingredients together
until they have a creamy consistency. Pour into the pie crust and chill in
the freezer for two hours before serving.
This creates a very rich pie, so keep your slices small. Remember... Your eyes
are bigger than your stomach!
